Shopping List
    For the Salad
  • 6 to 8 ounces lump crab meat (Note 1)
  • 1 head romaine, washed and chopped (about 6 handfuls)
  • 2 roma tomatoes, sliced
  • 2 avocados, diced
  • 3 ounces feta cheese
  • red onion, to taste
  • capers, to taste For the Dressing
  • 6 tablespoons extra-virgin olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon dijon mustard
  • 1/4 teaspoon dried dill (optional)
  • salt and pepper, to taste

Instructions
  1. Step 1: Combine all dressing ingredients in a small bowl or jar. Set aside.
  2. Step 2: Rinse, dry, and chop the romaine. Spread the romaine over a large serve plate or bowl. Top it with the crab, tomatoes, avocado, feta, and red onion. Sprinkle the capers over the top.
  3. Serve: Drizzle with the dressing and enjoy.

Recipe Notes

Note 1: As a budget-friendly alternative to crab, substitute by dicing an equivalent amount of pre-cooked shrimp.
