Cookie Dough Balls

I've been requested to keep a batch of these no-bake cookie dough balls at all times in the freezer. They're delicious, chewy, and only take minutes to prepare. It's nearly impossible to only eat one.

Shopping List
  • 1/4 cup raw or roasted cashew butter (Note 1)
  • 3 1/2 tablespoons oat flour
  • 2 1/2 tablespoons coconut flour
  • 2 tablespoons almond flour
  • 2 tablespoons mini vegan chocolate chips
  • 1 1/2 tablespoons maple syrup
  • 3/4 teaspoon vanilla extract
  • 1/8 teaspoon salt

Instructions
  1. Step 1: Add all ingredients, except the chocolate chips, to a food processor. Pulse until a thick batter is formed. Fold in the chocolate chips with a spatula.
  2. Step 2: Transfer the cookie dough batter to a cutting board (including any maple syrup that may have hidden under the blade). Use your hands to roll the batter into 6 ping-pong sized balls. Store the balls in the freezer until ready to eat.
  3. Serve: Take the cookie dough balls out of the freezer a few minutes before eating to soften slightly. Enjoy.

Recipe Notes

Note 1: Roasted cashew butter will give these cashew balls a very pronounced cashew flavor. Use raw cashew butter for a more mild flavor.
