10-Minute Feta Watermelon Salad

Juicy, salty, and perfectly refreshing - this Feta Watermelon Salad doesn't disappoint. Great on a hot, summer day or when you're craving something fresh and easy. Watermelon is ideal here, but can also be substituted with other varieties of melon.

    Salad
  • 2 cups seedless watermelon, cubed
  • 1 1 bunch watercress (Note 2)
  • 3/4 cup feta cheese, cubed
  • 1/2 cup fresh mint
  • 1/4 cup white or black sesame seeds Vinaigrette
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon lime juice
  • salt, to taste

Instructions
  1. Step 1: Whisk together the dressing ingredients. Set aside.
  2. Step 2: Combine all salad ingredients together, except the sesame seeds, in a bowl. Add the dressing and stir to coat. Sprinkle the seeds on top.
  3. Serve: Enjoy. This salad is best eaten fresh, since the watermelon will release its liquid over time.

Recipe Notes

Note 1: 2 cups of watermelon is equal to about 1/2 mini watermelon.

Note 2: 1 bunch of watercress is equal to about 1 large handful. If watercress is unavailable, substitute with an equal amount of another bitter leafy green, such as arugula.
