Watermelon Salad with Chili Lime Pepitas

This colorful salad of juicy watermelon, creamy avocado, and spicy pumpkin seeds, dressed with a fresh honey-lime vinaigrette, is a star at any table. Toss everything together just before serving for best results. I suggest making extra of the chili lime pepitas, they're ready in minutes and are downright addictive as a snack on their own.

  • 2 cups raw spinach, packed
  • 1 heaping cup seedless watermelon, cubed
  • 1 large avocado, diced Chili Lime Pepitas
  • 1/2 cup raw pepitas / pumpkin seeds
  • 1 tablespoon lime juice
  • 1 teaspoon extra-virgin olive oil
  • 1/4 teaspoon cayenne pepper (or more, to taste)
  • 1/4 teaspoon salt Dressing
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon lime juice
  • 1 teaspoon honey
  • 1/4 teaspoon salt
  • cayenne pepper, to taste

Instructions
  1. Step 1: First, let's make the Chili Lime Pepitas. Heat the oil in a skillet over medium heat. Once hot, add the pepitas and cook until they begin to pop and get a hint of extra color, about 3 minutes. Add the lime juice, cayenne, and salt. Stir until the juice has evaporated, about 1 more minute. Remove from the pan to cool.
  2. Step 2: Whisk together all dressing ingredients in a small bowl. Set aside.
  3. Step 3: In a mixing bowl, combine all of the salad ingredients, along with the prepared Chili Lime Pepitas. Stir to combine.
  4. Serve: Add the dressing just before serving and toss to coat. Enjoy.

Recipe Notes

Note 1: For reference, every 1 heaping cup of cubed watermelon is about 1/4 of a mini watermelon.
