    For the Salad
  • 2 cups seedless watermelon, cubed
  • 1 large handful watercress (or arugula)
  • 3/4 cup feta cheese, crumbled or cubed (or plant-based alternative)
  • 1/2 cup fresh mint leaves
  • white or black sesame seeds (optional, for sprinkling) For the Vinaigrette
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon lime juice
  • salt, to taste

Instructions
  1. Step 1: Whisk together the vinaigrette ingredients. Set aside.
  2. Step 2: Roughly chop the watercress and add to a bowl with the watermelon, feta, and mint. Add the vinaigrette and toss to coat.
  3. Serve: Divide onto plates, sprinkle with sesame seeds, and enjoy immediately.
