Watermelon, Feta, and Pine Nut Salad

An easy and refreshing Greek-inspired watermelon and feta salad with a hint of fresh herbs and toasted pine nuts. Drizzle with a little olive oil and enjoy.

Shopping List
  • 2 heaping cups diced watermelon (about 10 ounces)
  • 1 1/2 ounces feta cheese (Note 1)
  • 2 teaspoons pine nuts
  • 6 mint leaves, sliced (or 3 basil leaves)
  • 1 tablespoon extra-virgin olive oil
  • 1 handful arugula (optional)

Instructions
  1. Step 1: Toast the nuts in a dry frying pan over medium heat for 2 to 3 minutes, or until golden and fragrant. Shake the pan often to avoid burning. Set aside.
  2. Step 2: Toss the watermelon with the herbs and arugula (if using). Place on a serving plate and top with large pieces of the feta and the toasted nuts. Drizzle with olive oil.
  3. Serve: Enjoy immediately.

Recipe Notes

Note 1: Look for a feta block rather than pre-crumbled feta. This is especially good with a sheep and/or goat milk feta.
