Vegan Mushroom Bacon

Shiitake mushrooms have a naturally meaty taste to them, making them a great plant-based bacon alternative in this recipe. It couldn't be easier: mix together a few ingredients, then bake it until tender. It won't have the same crisp as traditional bacon - but the flavor is great (and even a little smoky).

Shopping List
  • 4 ounces shiitake mushrooms, sliced 1/4 inch thick
  • 1 1/2 tablespoons olive oil
  • 1 1/2 tablespoons tamari
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon liquid smoke (optional)

Instructions
  1. Step 1: Preheat oven to 350°F. Stir together all ingredients in a medium-sized bowl and coat the mushroom slices evenly in the sauce.
  2. Step 2: Spread the mushrooms in a single layer over a lined baking sheet. Bake for 20 to 25 minutes, stirring the mushrooms every 10 minutes or so. They should be crisp, but not blackened. Let the cooked mushrooms sit at room temperature at least 10 minutes before serving. Note: The mushroom bacon may also be 'cooked' in a dehydrator for several hours.
  3. Serve: Enjoy this mushroom bacon in sandwiches, Cobb Salad, or even piled over BLT Pizza. It makes a tasty snack on its own too.
