Gluten-Free BLT Pizza

Imagine it: the classic BLT sandwich fillings of lettuce, bacon, and tomatoes loaded onto a freshly-baked cheesy pizza crust. It's savory, refreshing, and surprisingly light. Be sure to add the lettuce at the end of baking so that the greens remain crisp with every bite.

Shopping List
  • 1 fresh or frozen pizza crust
  • 1 1/2 cups romaine or red leaf lettuce, chopped
  • 1 cup shredded mozzarella
  • 1 cup cooked bacon, crumbled
  • 1 large tomato, thinly sliced
  • garlic powder, to taste
  • ranch dressing, to taste (store-bought or homemade)

Instructions
  1. Step 1: Pre-bake the crust according to package directions.
  2. Step 2: Add the following evenly over the crust (in order): shredded mozzarella, sliced tomatoes, and cooked bacon. Sprinkle with garlic powder.
  3. Step 3: Place the pizza back into the hot oven until cheese is melted. For my crust, this took about 4 minutes under the broiler. Meanwhile, toss the lettuce lightly with ranch dressing.
  4. Serve: Remove the pizza from the oven top with the dressed salad greens. Slice and enjoy.

Recipe Notes

Note 1: 1 cup of cooked, crumbled bacon is equivalent to about 3 slices.

Note 1: For a homemade paleo cheese sauce, try White Cashew Cheese Sauce. Since this nut-based sauce will burn at high temperatures, only place it in the oven for under 30 seconds. The residual heat of the pre-baked crust will naturally soften the cheese.
