Vegan Banana Pancakes

Warm and fluffy homemade vegan banana pancakes with fresh banana mashed right into the batter. Very easy. Freezes well for a quick weekday breakfast.

Shopping List
  • 1 cup all-purpose flour (or gluten-free blend)
  • 66666667/100000000 cup non-dairy milk
  • 1 medium-sized ripe banana, mashed
  • 2 tablespoons coconut sugar (or cane sugar)
  • 2 teaspoons baking powder
  • 1/2 heaping teaspoon cinnamon
  • pinch of salt
  • vegan butter or coconut oil, for frying

Instructions
  1. Step 1: Stir together the dry ingredients: flour, sugar, baking powder, cinnamon, and salt in a bowl.
  2. Step 2: In a separate bowl, stir the milk and mashed banana. Add the wet ingredients to the dry and stir until just combined. You'll have some nice little banana pieces in there. Note: Add in some chocolate chips or chopped walnuts now if you like.
  3. Step 3: Heat a nonstick pan over medium heat. Melt a dab of vegan butter or coconut oil in the pan and swirl to coat the pan.
  4. Step 4: Using a ¼ cup measure, scoop the batter onto the warm skillet. Cook for 2-ish minutes, or until little air pockets appear. Flip and cook on the other side for 1 to 2 minutes.
  5. Serve: Enjoy with your favorite toppings.
