3-Ingredient Banana Pudding

This banana pudding is all too easy to make, and even easier to enjoy. It's amazing how a simple combination of walnuts, dates, and banana can create such a rich, smooth pudding that is on par with all the sugar-laden cream-based varieties out there. The walnut topping adds a pleasant crunch that contrasts against every lush bite. Discoloration owing to the oxidation of the bananas is entirely normal after a few hours, and if anything - it intensifies the banana flavor.

    Pudding
  • 2 ripe bananas
  • 4 small dates, pitted (Note 1)
  • 1 cup raw walnuts
  • 1/2 teaspoon cinnamon (optional, but recommended)
  • 1/2 teaspoon vanilla extract (optional, but recommended) Topping
  • 1/2 cup raw walnuts

Instructions
  1. Step 1: If the dates seem dry or brittle, soak them in warm water for 30 minutes prior to using. Drain well.
  2. Step 2: Place the walnut topping in a food processor and pulse until the nuts are finely chopped and resemble a crumble. Avoid over-mixing the nuts into a flour consistency. Remove from the processor and set aside.
  3. Step 3: Add all pudding ingredients to a food processor and blend until smooth. It should turn a light purple/pink color. A blender will not work for this.
  4. Step 4: Transfer the pudding to an airtight container of choice and sprinkle with the optional topping. Place in the refrigerator and allow to cool at least 1 hour before serving.
  5. Serve: Grab a spoon and enjoy. This pudding will discolor slightly after the first day, due the oxidation of the bananas. It will still taste amazing though. Store any leftovers in the refrigerator in an airtight container.

Recipe Notes

Note 1: Every 4 small dates is equivalent to about 2 larger medjool dates.
