These Smoked Salmon Sandwiches are easy and delicious for breakfast or lunch. The soft cream cheese is perfect with the crunchy cucumber, juicy tomato, and hint of red onion.

Shopping List
  • 1 english muffin, bagel, or sliced bread (or low-carb english muffin)
  • 1 to 2 slices smoked salmon
  • 2 to 3 tablespoons cream cheese (dairy or non-dairy)
  • 1 big tomato slice(s)
  • 1 lettuce leaf (such as romaine)
  • cucumber slices, to taste
  • red onion slices, to taste

Instructions
  1. Step 1: Slice the english muffin in half and toast it. Meanwhile, slice the tomato, cucumber, and red onion.
  2. Step 2: Smear the bottom of the toasted english muffin with the cream cheese. Top with a little lettuce, the smoked salmon, cucumber, tomato, and red onion. Season with some optional black pepper and top with the other english muffin half.
  3. Serve: Enjoy immediately or at room temperature.
