  • 1 pound chicken thighs, skinless and boneless
  • 3 tablespoons olive oil
  • 2 garlic cloves, chopped
  • 1 teaspoon coconut sugar
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cumin
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon allspice
  • 1/4 teaspoon salt
  • 1/8 teaspoon cayenne (add more if you like it spicy)

Instructions
  1. Step 1: Combine all ingredients, except the chicken, in a small bowl until smooth.
  2. Step 2: Place the chicken in a glass container and pour the spice marinade over the chicken. Toss the chicken so that it is entirely coated in the marinade. Marinate the chicken in the refrigerator at least 2 hours, up to 24 hours.
  3. Step 3: Preheat a grill or frying pan over high heat. Once hot, add the marinated chicken thighs. Spooning any additional marinade over the top. Grill for about 3 minutes per side, or until the juices run clear.
  4. Serve: Grab a plate and enjoy.
