Kale Salad with Grapes and Walnuts

Sweet grapes and crisp pears are the perfect compliment to naturally radicchio. Add that to a base of massaged kale and you get a delicious salad rich in flavors and textures. The sweet olive oil vinaigrette ties all the flavors together and further mellows out the naturally bitter radicchio. Bonus? Radicchio has been shown to help encourage digestion, fight parasites, encourage weight loss, and assist with the body's metabolism. Eat up.

    Salad
  • 5 cups kale, washed and dried (about 1 small bunch)
  • 1/2 small radicchio, chopped
  • 1 cup seedless red or green grapes, halved
  • 1/2 cup walnuts
  • 1 firm pear, thinly sliced Vinagrette
  • 4 tablespoons extra-virgin olive oil
  • 3 tablespoons honey
  • 2 tablespoons apple cider vinegar
  • salt and pepper, to taste

Instructions
  1. Step 1: Stir together all vinaigrette ingredients. Set aside.
  2. Step 2: Remove the hard, fibrous stalks from the kale. Transfer the kale leaves to a mixing bowl. Add the radicchio to the bowl with the kale leaves. Pour in a few tablespoons of the dressing and use your hand to massage it into the leaves. Massage for 15 seconds, or until softened. Note: even if you are making this salad ahead of time, do not skip this step of massaging
  3. Serve: Add all remaining salad ingredients to the bowl. Pour in additional vinaigrette, to taste.
