Kale Salad with Grapes and Walnuts

Massaged kale and radicchio salad tossed with grapes, pear, and walnuts in a simple olive oil vinaigrette. So good, and so good for you.

Shopping List
    For the Salad
  • 5 handfuls kale, stems removed
  • 1/2 small radicchio, chopped
  • 1 cup seedless red or green grapes, halved
  • 1 pear, thinly sliced
  • 1/2 heaping cup walnuts For the Vinagrette
  • 4 tablespoons extra-virgin olive oil
  • 4 teaspoons apple cider vinegar
  • 2 teaspoons honey (or maple syrup)
  • salt and pepper, to taste

Instructions
  1. Step 1: Stir together the vinaigrette. Set aside.
  2. Step 2: Remove the stems from the washed kale and chop into bite-sized pieces. Place in a mixing bowl and add a splash of the vinaigrette. Use you hand to massage the vinaigrette into the kale until softened, about 15 seconds.
  3. Serve: Add the radicchio, grapes, pear, and walnuts. Toss with additional vinaigrette, to taste. Enjoy.
