Shopping List
  • 6 large medjool dates, pitted
  • 1/4 cup cocoa powder
  • 1/4 cup creamy raw almond butter
  • 3 tablespoons vegan white chocolate, chopped (such as EVOLVED keto white chocolate bars)
  • 1 tablespoon maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/8 teaspoon salt

Instructions
  1. Step 1: Chop the white chocolate into small 1/4-inch pieces. Set aside.
  2. Step 2: Combine the pitted dates, cocoa powder, 1/4 cup almond butter, maple syrup, vanilla extract, and salt in a food processor (do not add the white chocolate yet). Blend until everything is broken down into a fine crumble, about 30 to 60 seconds. The dough should stick together when pressed with your fingertips.
  3. Step 3: Transfer the dough to a cutting board. Roll the dough into 6 to 8 balls, adding a few of the white chocolate pieces into each as you roll them, until all the dough and white chocolate is used up.
  4. Serve: Store all of the rolled bliss balls in the freezer until firm, up to several months. Enjoy!
