Cashew Balsamic Dressing

A creamy and savory oil-free balsamic dressing made with cashews, tamari, and nutritional yeast. Perfect over salads and grains.

Shopping List
  • 1/4 cup raw cashews (not roasted)
  • 3 to 4 tablespoons water
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon dijon mustard
  • 1/2 teaspoon all-purpose seasoning (optional, Note 1)
  • 1/2 teaspoon low-sodium tamari
  • 1/2 teaspoon nutritional yeast (optional)
  • salt and pepper, to taste

Instructions
  1. Step 1: Combine the cashews, 2 tablespoons water, balsamic vinegar, dijon, all-purpose seasoning, tamari, and optional yeast with an immersion blender or small standing blender until very smooth. Season with salt and pepper, adding more water for a thinner consistency. Note: This dressing will thicken when refrigerated.
  2. Serve: This is great in Crouton Salad with Cashew Balsamic Dressing.

Recipe Notes

Note 1: To make your own all-purpose seasoning mix, combine 1/2 teaspoon paprika + 1/2 teaspoon onion powder + 1/2 teaspoon garlic powder + 1/4 teaspoon oregano + 1/4 teaspoon cayenne pepper (optional).
