Berry and Mixed Nut Balsamic Salad

I could eat this salad everyday. Juicy strawberries, blueberries, crisp cucumbers, and hearty nuts. Bacon is optional, but does add a delicious savory note here. It's all tossed in the easiest, 3-ingredient balsamic vinaigrette. A simple side of grilled chicken, steak, veggie burger, or even quinoa would make this a wonderful, satisfying meal.

Shopping List
    Salad
  • 4 ounces mixed salad greens
  • 1 cup strawberries, quartered
  • 3/4 cup cucumbers, sliced (ideally Persian cucumbers)
  • 1/2 cup blueberries
  • 1/2 cup mixed nuts, roasted and salted (see notes)
  • 4 slices cooked bacon, chopped (optional) Balsamic Vinaigrette
  • 6 tablespoons olive oil
  • 2 tablespoons good quality balsamic vinegar
  • 2 teaspoons dijon mustard
  • salt and pepper, to taste

Instructions
  1. Step 1: Whisk together the vinaigrette ingredients until smooth. Set aside.
  2. Step 2: Combine all of the salad ingredients in a large mixing bowl. Pour in half of the prepared vinaigrette and toss.
  3. Serve: Plate the salads and drizzle with the remaining vinaigrette, to taste. Enjoy.

Recipe Notes

Any pre-made mixed nut variety will work here. My favorite variety is to combine: 1/4 cup roasted almonds, 1/4 cup pecans, 1/4 cup brazil nuts, and 1/4 cup roasted cashews. Save any leftover mixed nuts for snacking later.
