A thick and creamy carrot and ginger salad dressing recipe inspired by the (now closed) Dojo Restaurant of New York City. Delicious drizzled over salads, veggie burgers, and tofu. Don't let the ingredient list intimidate you, it all comes together in minutes.

Shopping List
  • 1 medium-sized carrot, peeled
  • 33333333/100000000 cup safflower oil
  • 1/4 cup brown onion, diced
  • 2 tablespoon fresh ginger, peeled and chopped
  • 2 tablespoons rice vinegar
  • 1 tablespoon water
  • 1 tablespoon low-sodium tamari
  • 1 tablespoon honey
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon sweet miso paste (optional)
  • 1/4 teaspoon salt

Instructions
  1. Step 1: In a blender, combine all of the salad dressing ingredients until completely smooth. Scrape down the sides of the machine as needed. Taste and adjust seasonings as desired.
  2. Serve: Refrigerate the Carrot Ginger Salad Dressing in an airtight container until ready to use. This is terrific on Dojo Salad.
