Carrot Ginger Salad Dressing

Valentina

A thick and creamy carrot and ginger salad dressing inspired by the cult-classic house dressing at (the now closed) Dojo of New York City. While this isn't quite the same, it does recall memories spent in that dimly lit college student's haven on St. Mark's Place. This carrot and ginger dressing is delicious drizzled over salads, veggie burgers, and tofu. Don't let the ingredient list intimidate you, it all comes together in minutes.
