Avocado Egg Salad Sandwiches

The best egg salad sandwich. Creamy avocado egg salad stuffed into toasted sourdough and topped with juicy roasted tomatoes and a hint of arugula.

Shopping List
  • 4 slices sourdough bread
  • 3 hard boiled eggs (Note 1)
  • 1 avocado
  • 2 to 3 slow roasted tomatoes
  • 1 handful arugula
  • 1 tablespoon mayonnaise or garlic aioli (plus extra for spreading)
  • 1 teaspoon lemon juice
  • salt and pepper, to taste

Instructions
  1. Step 1: Mash the avocado with a fork until it's creamy, but still has some avocado chunks.
  2. Step 2: Peel the cooled hard boiled eggs and roughly dice. Add the diced eggs, mashed avocado, mayonnaise or garlic aioli, and lemon juice to bowl. Season with salt and pepper and stir to combine.
  3. Step 3: Toast the bread and spread each side with additional mayonnaise or garlic aioli, to taste. Divide the egg salad onto 2 of the bread slices and top each with a little arugula. Roughly dice the roasted tomatoes and scatter them over the arugula.
  4. Serve: Season with optional salt and pepper and then top with the remaining toasted bread. Slice and enjoy.

Recipe Notes

Note 1: For perfect hard boiled eggs, bring a small pot of water to a boil. Gently place the eggs into the boiling water with a skimmer or spoon. Continue boiling the eggs for about 11 minutes. Drain the eggs and immediately submerge them in ice water to stop them from cooking.
