Shopping List
  • 1 (15 ounce) can chickpeas, drained and rinsed
  • 1/4 cup celery, finely chopped
  • 1/4 cup red onion or shallot, finely chopped
  • 2 tablespoons mayonnaise (Note 1)
  • 2 tablespoons capers or chopped pickles
  • 1 1/2 tablespoons lemon juice (reduce to 1 tablespoon for less tart)
  • 1 teaspoon dijon mustard
  • 1/4 teaspoon all-purpose seasoning (such as Old Bay)
  • salt and pepper, to taste

Instructions
  1. Step 1: Combine all ingredients in a mixing bowl and use a fork or potato masher to break down the chickpeas into a chunky mash. Taste and adjust seasonings as desired.
  2. Serve: This chickpea salad is epic on toasted Gluten-Free Oat Bread or salad greens.

Recipe Notes

Note 1: If you prefer not to use mayonnaise, try substituting with 1.5 tablespoons of tahini mixed with .5 tablespoon of water.
