Turkey and Potato Chip Sandwich

The tastiest turkey sandwich loaded with avocado, hummus, crunchy vinegar potato chips, and an optional runny fried egg. It's salty, tangy, and crunchy goodness.

Shopping List
  • 2 slices sandwich bread (such as The Best Paleo Bread)
  • 2 to 3 ounces sliced turkey breast or ham
  • 1 egg (optional)
  • 1/4 avocado, sliced
  • 2 tablespoons hummus (or mayo, to taste)
  • vinegar potato chips (as many as you can fit)
  • butter lettuce or spring mix, to taste
  • pickles or pepperoncini (optional, to taste)

Instructions
  1. Step 1: If adding the fried egg, heat a nonstick frying pan over medium-high heat. Add a small dollop of butter or oil. Gently crack the egg into the pan and cook over easy so that the yolk stays a bit runny. Slide onto a plate.
  2. Step 2: Build your sandwich with a little lettuce, sliced turkey, optional fried egg, avocado slices, and optional pickles. Carefully arrange the potato chips on top. Smear the hummus or mayo on the other slice of bread and top the sandwich.
  3. Serve: Lightly press down on the sandwich as you cut it. Enjoy!
