Asian-Style Black Bean Burgers

This is one heck of a great veggie burger. Black beans and rice form the bulk of the patty, while Asian-inspired flavors like scallions, cilantro, garlic, peanut butter, and hot sauce add pizzaz. The process is simple: dump the ingredients in a food processor, chill it for a bit, and then fry it up. Serve the patties in a kimchi burger, over salads, or even rolled up into a sushi burrito.

Shopping List
  • 1 1/4 cups cooked white or brown rice
  • 1 (15 ounce) can black beans, drained and rinsed
  • 1/4 cup scallions, white and light green parts only
  • 1/4 cup brown rice flour
  • 1/4 cup cilantro
  • 2 garlic cloves
  • 1 tablespoon smooth peanut butter (see notes)
  • 1/2 tablespoon low-sodium tamari
  • 2 teaspoons hot sauce
  • 1 teaspoon sesame oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground ginger
  • pepper, to taste

Instructions
  1. Step 1: Add all of the burger ingredients into a large food processor. Pulse everything until a uniform mixture is formed, about 30 seconds to 1 minute. It should be sticky and hold together between your fingers.
  2. Step 2: Transfer the burger mixture to a small bowl or airtight container and let chill for at least 20 minutes. The chill time will make the burgers hold together better when cooking.
  3. Step 3: Wet your hands with water and begin shaping the batter into burgers. The water will help keep the burger from sticking to your hands. It will continue to firm up as it cooks.
  4. Step 4: Heat an oiled skillet over medium-high heat. Once hot, add the burgers, being careful not to overcrowd the pan. Cook the burgers until browned on each side, about 2 to 3 minutes per side.
  5. Serve: Enjoy in a kimchi burger, teriyaki burger, over salads, or even rolled up into a sushi burrito.

Recipe Notes

Note 1: Can't eat peanuts? Try using cashew or almond butter instead. For a nut-free option, use sunflower butter or tahini.
