Zucchini Fritters with Tzatziki

Perfectly seasoned homemade zucchini fritters with a crispy-soft bite. Perfect as a side dish, light entree, or appetizer. A dollop tzatziki sauce on top is a must.

For the Fritters
- 1 1/2 pounds zucchini (about 4 medium zucchini)
- 1/2 medium onion, any variety
- 1/2 cup all purpose flour, gluten-free flour blend, or garbanzo flour
- 1/4 cup feta cheese
- 1 large egg
- 1 garlic clove, chopped
- 3/4 teaspoon salt, divided
- 2 tablespoons grated parmesan cheese (optional)
- 1 tablespoon fresh parsley, chopped (optional)
- 1/2 tablespoon fresh mint, chopped (optional) For Serving
- Tzatziki Sauce, to taste (store-bought or homemade)
Instructions
- Step 1: Cut off the ends of the zucchini and remove the outer peel of the onion. Grate the zucchini and onion on the large holes of a box grater (or use a food processor with a grating attachment). Sprinkle the grated vegetables with 1/2 teaspoon of the salt and transfer them into a fine-meshed sieve placed over a bowl. Let the vegetables drain for 30 minutes.
- Step 2: Place the drained vegetables on a cheesecloth (or a thin kitchen towel/paper towel/nut milk bag) and gather the edges into a bag. Squeeze tightly to remove as much of the excess water as possible. Removing the water will help hold these fritters together when cooking.
- Step 3: Place the squeezed vegetables into a mixing bowl. Add all of the remaining ingredients: flour, feta, egg, garlic, .1/4 teaspoon salt, optional parmesan, and fresh herbs. Stir to combine until the feta is broken down and everything is evenly incorporated.
- Step 4: Divide the mixture into 10 to 12 equal mounds and use your hands to roll them into balls. They should feel very wet, but will just hold together in a ball shape.
- Step 5: Heat a thin layer of cooking oil (we like to use a 50/50 blend of avocado oil and olive oil) over medium-high heat until a drop of water sizzles on contact with the oil. Transfer some of the zucchini balls to the hot pan and push down each fritter with a spatula to flatten. Do not overcrowd the pan. Cook the fritters for 2 to 3 minutes on each side or until golden brown. Transfer to a cooling rack and continue frying the remaining fritters. Reduce the heat if the fritters are browning too quickly and add more oil as needed.
- Serve: Enjoy warm with a dollop of Tzatziki Sauce.
