Vegan Protein Baked Oats

A delicious and easy plant-based baked oats recipe inspired by the viral TikTok breakfast trend. Gluten-free, high in protein and no eggs needed. Check out the notes below for a chocolate version too!

 - 1/2 cup rolled oats (not steel cut)
 - 1/2 cup non-dairy milk
 - 33333333/100000000 cup applesauce or mashed banana
 - 1 scoop plant-based protein powder of choice
 - 1/2 teaspoon baking powder
 - 1/2 teaspoon vanilla extract
 - pinch of salt Mix-Ins (optional)
 - peanut butter, coconut sugar, cinnamon and/or chocolate chips Toppings (optional)
 - fruit, maple syrup, and/or chocolate chips
 
Instructions
- Step 1: Preheat the oven to 350 degrees Fahrenheit. Combine all of the base ingredients in a high-powered blender or food processor. Blend for 15 to 30 seconds. Fold in any optional mix-ins.
 - Step 2: Pour the batter into a small oven-proof baking dish, such as 1 (4 to 5 inch) ramekin. Bake for 20 to 22 minutes, or until the top is firm to the touch.
 - Serve: Top with your favorite fixings and enjoy.
 
Recipe Notes
Chocolate Version: Combine 3/4 cup non-dairy milk + 1/2 cup rolled oats + 1/4 cup plant-based protein + 1 tablespoon cocoa powder + 1/2 teaspoon baking powder.
