Gooey Microwave Brownie

Satisfy any late-night chocolate cravings with this decadent, single-serving treat. Ready in minutes, gluten-free, and made using only a handful of guiltless ingredients. This is epic with a scoop of cold ice cream on top. Yum.

Shopping List
  • 1 1/2 tablespoons unsweetened cocoa powder
  • 1 tablespoon granulated sugar
  • 1 tablespoon coconut flour
  • 1 tablespoon smooth nut or seed butter (I used almond butter)
  • 2 tablespoons unsweetened applesauce
  • 1 1/2 tablespoons non-dairy milk
  • 1 microwave-safe mug or 4-inch ramekin
  • chocolate chips, for topping
  • ice cream of choice, for topping

Instructions
  1. Step 1: Add all of the ingredients to the mug or ramekin. Stir very well, until no lumps remain. Be sure to stir the corners as well, to mix any flour hiding in there.
  2. Step 2: Microwave for 60 to 90 seconds, depending on your microwave wattage. I like to slightly undercook it, so that the middle is still a bit gooey. If making more than 1 serving, microwave each brownie separately, as combining them will affect the microwave time settings. Note: If you don't have a microwave, bake the brownie in an oven-safe ramekin for 9 to 12 minutes.
  3. Step 3: Sprinkle with chocolate chips and let the brownie cool for 1 to 2 minutes before digging it. This rest time will help the brownie finish cooking.
  4. Serve: Grab a spoon and enjoy. This is epic with a big scoop of ice cream on top.

Melted plant-based butter will also work in place of the almond butter, though the flavor won't be quite as rich. If doing this, decrease the milk to 1 tablespoon.

If using raw cacao powder (which is more bitter), I recommend using only 1 tablespoon and increasing the sugar to 1.5 tablespoons.
