    Tofu
  • 1 (15 ounce) block(s) extra-firm tofu
  • 1 tablespoon cooking oil
  • salt and pepper, to taste Teriyaki Sauce
  • 1/4 cup low-sodium tamari
  • 2 tablespoons mirin (we use this one)
  • 2 tablespoons rice vinegar
  • 2 tablespoons sugar or coconut sugar (Note 1)
  • 1 teaspoon freshly grated ginger
  • 1 teaspoon cornstarch
  • 1 teaspoon cold water

Instructions
  1. Step 1: Remove the tofu from the packaging and drain out all of the liquid inside. Press the tofu using a tofu press, or cut it in half lengthwise and wrap each half in clean, absorbent towels. You can use paper towels or clean reusable ones. Set the wrapped tofu on a cutting board and then set something heavy on top of it. A heavy pan or book would work. Press out the moisture in this way for 15 to 20 minutes.
  2. Step 2: Meanwhile, add all of the Teriyaki Sauce ingredients, except the starch and water, to a small saucepan. Bring the sauce to a low simmer over medium heat.
  3. Step 3: Whisk together the starch and water to form a slurry. Pour the slurry into the simmering sauce, stirring constantly as you do so. Continue stirring for 1 to 2 minutes, or until the sauce thickens slightly. Remove from the heat and set aside.
  4. Step 3: Dice the pressed tofu into bite-sized cubes and season with salt and pepper.
  5. Step 4: Heat the 1 tablespoon of cooking oil over medium high heat. Add the cubed tofu and fry until very golden brown on all sides, about 5 to 7 minutes.
  6. Step 5: Pour in some of the Teriyaki Sauce – enough to generously coat the tofu – and stir fry for another 30 seconds or so.
  7. Serve: Sprinkle with sesame seeds and/or scallions. Enjoy.
