Taha'a Sautéed Vegetables

This colorful vegetable side dish takes me right back to French Polynesia. The combination of celery, bell pepper, zucchini, and radish was inspired by a very similar combination served while I was on vacation in the small island of Taha'a. It's a 1-pan easy side dish that's ready in under 15 minutes.

Shopping List
  • 2 celery stalks
  • 1 bell pepper (any color)
  • 1 large zucchini
  • 5 radishes, cut into wedges
  • 2 garlic cloves, minced
  • 2 tablespoons extra virgin olive oil
  • 1/2 teaspoon salt
  • pepper, to taste

Instructions
  1. Step 1: Slice the zucchini in half vertically, then cut each half into 1/4 to 1/2 inch diagonal slices. Then slice the celery and bell peppers into 1/2 inch slices.
  2. Step 2: Heat the olive oil in a skillet over medium-high heat. Add the garlic and cook for 30 seconds. Add the vegetables, salt, and pepper. Cook for 7 to 9 minutes, or until the vegetables are tender.
  3. Serve: Enjoy.
