Shopping List
  • 1 large sweet potato
  • 4 ounces grilled marinated artichoke hearts (drained)
  • 1 avocado, diced
  • 1 tomato, diced
  • 2 handfuls arugula
  • 1 tablespoon olive oil (plus more for dressing)
  • lemon, salt, and pepper

Instructions
  1. Step 1: Preheat the oven to 400 degrees Fahrenheit.
  2. Step 2: Dice the sweet potato into 1-inch pieces. Place on a baking sheet and toss with 1 tablespoon of olive oil. Season with salt and pepper. Roast for 30 to 35 minutes, stirring halfway through the cooking time.
  3. Step 3: Toss the arugula with a little olive oil, lemon juice, and salt. Top with the roasted sweet potatoes, tomato, avocado, and artichoke hearts. Drizzle with a little olive oil and lemon, to taste.
  4. Serve: Drizzle with a little olive oil and lemon, to taste. Enjoy.
