Simple Tomato Cucumber Salad

A no-fuss tomato and cucumber side salad dressed with lemon, olive oil, and dried oregano. Serve this alongside dolmas, hummus and pita, and/or burgers.

Shopping List
  • 2 firm roma tomatoes
  • 1 small cucumber, lightly peeled
  • 1/4 red onion (optional)
  • 1 small handful fresh parsley, chopped
  • 2 tablespoons olive oil
  • 1/2 tablespoon lemon juice
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • black pepper, to taste

Instructions
  1. Step 1: Chop the tomatoes, cucumbers, and optional onion into small, 1/2" inch pieces.
  2. Step 2: Add all ingredients to a bowl and stir to combine. Taste and adjust seasonings as desired.
  3. Serve: Enjoy as a light, refreshing side salad.
