  • 2 roma tomatoes, diced (about 1 cup)
  • 1 cup english or persian cucumber, diced
  • 1/4 cup red onion, finely diced (optional)
  • 2 tablespoons parsley, chopped
  • 2 tablespoons olive oil
  • 1/2 tablespoon lemon juice
  • 1/4 teaspoon dried oregano
  • 1/8 teaspoon salt and pepper, to taste

Instructions
  1. Step 1: Dice the tomatoes, cucumbers, and optional onion.
