Roasted Brussel Sprouts with Bacon

Roasted brussel sprouts with crispy browned edges mixed with salty bacon and a hint of chopped dates. This easy 3-ingredient sheet pan recipe is the perfect vegetable side dish to any meal.

Shopping List
  • 12 ounces brussel sprouts
  • 2 slices uncooked bacon
  • 2 to 3 pitted medjool dates, chopped
  • 1 1/2 tablespoons olive oil
  • salt and red pepper flakes, to taste

Instructions
  1. Step 1: Preheat the oven to 420 degrees Fahrenheit.
  2. Step 2: Slice the whole brussel sprouts with a knife lengthwise to make several thinner slices out of each sprout (about 3-4 slices per sprout).
  3. Step 3: Spread the sliced brussel sprouts on a large baking sheet and toss with the olive oil and some salt. Cut the bacon into 1/2 inch strips and scatter the pieces over the top.
  4. Step 4: Roast the brussel sprouts for 10 to 12 minutes, or until the sprouts are browned and the bacon is cooked.
  5. Serve: Remove from the oven and scatter the chopped dates on top. Sprinkle with red pepper flakes and stir to combine. Enjoy.
