Radicchio, Tomato, and Sausage Salad

This easy meal-in-one salad recipe uses only 4 simple ingredients and is ready in under 10 minutes. The combination of bitter radicchio alongside juicy tomatoes and salty sausage is a delicious Mediterranean-inspired flavor trio. A very good quality olive oil makes the whole meal even better.

Shopping List
  • 1/2 small head radicchio, roughly chopped
  • 2 firm roma tomatoes, diced
  • 2 to 3 chicken or plant-based sausages (Note 1)
  • 2 tablespoons extra-virgin olive oil (plus more for drizzling)
  • sea salt, to taste

Instructions
  1. Step 1: Slice the sausages into 1/2 inch rounds and cook the sausage in a frying pan over medium-high heat until cooked and/or browned. Set aside.
  2. Step 2: Combine the chopped raddichio with the diced tomatoes, olive oil, and a generous pinch of salt. Stir in the warm sausage slices right before serving.
  3. Serve: Drizzle with extra olive oil as needed and enjoy.

Recipe Notes

Note 1: I like to use fully-cooked store-bought sausages (especially from Trader Joe's) here. Italian-flavored varieties work especially well.
