Peach Caprese Sandwich

This is the classic Italian combination of mozzarella, tomatoes, and basil - with a spin. The addition of fragrant, ripe peaches add deliciously juicy summertime flavor. Shopping List
  • 1 ciabatta loaf or baguette (or 4 small ciabatta rolls)
  • 12 ounces fresh mozzarella, thickly sliced
  • 1 ripe peach, sliced
  • 1 large tomato, sliced
  • 1/2 cup basil pesto (store-bought or homemade)
  • 8 fresh basil leaves
  • extra-virgin olive oil, for drizzling (optional)
  • salt and black pepper, to taste

Instructions
  1. Step 1: Slice the ciabatta in half lengthwise. Slice the peaches and discard the pit.
  2. Step 2: Place the sliced ciabatta on a cutting board and spread each half evenly with the pesto. Layer the mozzarella over the bottom bread half and then top with the peach slices, tomato, basil, salt and pepper. Drizzle with the optional olive oil and cover with the other piece of bread. Slice the loaf into individual portions, making sure that each piece has mozzarella, peach, tomato, and basil in it.
  3. Serve: Grab a big bite and enjoy. This is also delicious prepared in a panini maker.
