Shopping List
    For the Tofu
  • 1 (16 ounce) block extra-firm tofu
  • 2 tablespoons avocado oil, divided
  • 2 tablespoons corn starch For the Sauce
  • 1/4 cup + 2 tablespoons orange juice
  • 2 tablespoons water
  • 2 tablespoons cane sugar
  • 1 1/2 tablespoons low-sodium tamari or coconut aminos
  • 1 garlic clove, minced
  • 1/2 inch fresh ginger, peeled and chopped
  • 1/2 tablespoon corn starch
  • 1/2 orange, zested (about 1/2 tablespoon zest)
  • salt and red pepper flakes, to taste

Instructions
  1. Step 1: Drain and press the tofu with a tofu press, or wrap it in clean kitchen towels and place a heavy weight on top (like a cast iron pan). Press for 15 minutes.
  2. Step 2: Preheat the oven to 400 degrees Fahrenheit.
  3. Step 3: Tear the tofu with your hands into irregular 1-inch pieces. Toss the tofu in a bowl with the avocado oil and starch. Spread it in a single layer over a lined baking sheet. Bake for 25 to 30 minutes. At the halfway mark, remove the pan from the oven and let the tofu rest for a few minutes before flipping it (this will make it a little less sticky and easier to flip).
  4. Step 4: While the tofu cooks, combine the orange juice, water, tamari, and ginger in a bowl. Heat a skillet over medium-high heat and add the sauce. Heat for 3 minutes.
  5. Step 5: In a small bowl, stir together the 1/2 tablespoon of corn starch with 1/2 tablespoon of cold water to make a slurry. Pour the slurry into the warm sauce, stirring constantly as you do so. Keep stirring the sauce until it thickens, about 3 to 5 more minutes.
  6. Step 6: Stir in the orange zest, pepper flakes, and a pinch of salt. Transfer the sauce to a bowl or container.
  7. Step 7: Once the tofu is ready, heat a little splash of avocado oil in an empty skillet over medium-high heat. Add the garlic and cook for 1 minute, or until lightly golden. Add the tofu and orange sauce. Stir everything together until warmed through.
  8. Serve: Divide onto plates with an optional sprinkle of sesame seeds. Enjoy.
