Mediterranean Tuna Salad! The best crunchy rainbow salad with all the flavors of the Mediterranean and easy protein-packed tuna. Healthy, fresh, and ready in minutes.

Shopping List
- 1 (5 ounce) can tuna packed in olive oil, lightly drained (Note 1)
- 1/2 bell pepper, diced (any color)
- 1/2 avocado, diced
- 1/4 cup cucumber, halved and sliced
- 1/4 cup pitted kalamata olives, halved
- 1/4 cup cherry tomatoes, halved
- 2 tablespoons pepperoncini, chopped (optional)
- 2 tablespoons feta cheese (optional)
- 1 tablespoon olive oil
- 1/4 teaspoon dried oregano
- salt and pepper, to taste
Instructions
- Step 1: Chop the bell pepper, avocado, cucumber, olives, tomatoes, and pepperoncini into bite-sized pieces.
- Step 2: Combine all the vegetables in a bowl with the olive oil, oregano, and a pinch of salt and pepper.
- Serve: Lightly drain the tuna (leave some olive oil still in there) and flake the tuna over the salad, or on the side. Top with optional feta and enjoy.
Recipe Notes
Note 1: A high quality canned tuna, such as Tonnino or Portofino, is really worth the added cost. The cheaper canned tuna varieties tend to be mushy and tasteless with enhanced broth or cheap oil.
