Vegan Pizza with Tomato Sauce and Artichokes

The ingredients are few and simple: olive oil, tomato sauce, artichokes, and arugula on a crispy store-bought pizza crust. We especially love a fluffy, thick crust here.

Shopping List
  • 1 fresh or frozen pizza crust of choice
  • 1/2 cup to 3/4 cup tomato-basil sauce or good quality pizza sauce
  • 4 to 6 ounces marinated grilled artichoke hearts, lightly drained (Note 1)
  • 1 ounce vegan ricotta, optional (store-bought or homemade)
  • 1 handful arugula
  • olive oil and garlic powder, to taste
  • red pepper flakes and salt, to taste

Instructions
  1. Step 1: If pre-baking the crust is required before adding the toppings, do so now. After pre-baking, adjust the oven to 450 degrees Fahrenheit.
  2. Step 2: Brush a thin layer of olive oil over the pizza crust. Then spread the tomato sauce over the pizza, adding more or less sauce as needed for the size of your pizza. Bake the pizza for 6 to 8 minutes, or until the pizza is hot and golden. A pizza stone or pan will yield the crispiest crust results.
  3. Step 3: Meanwhile, toss the arugula with a little olive oil. Set aside.
  4. Step 4: Chop the artichoke hearts into bite-sized pieces.
  5. Step 5: Remove the pizza from the oven top with dollops of optional ricotta. Scatter the artichokes evenly over the sauce and cheese. Sprinkle with garlic powder and red pepper flakes. Top with the arugula. Note: the exact amount of toppings needed will vary slightly depending on the size of your pizza crust.
  6. Serve: Slice and enjoy.

Recipe Notes

Note 1: The better the prepared marinated artichoke hearts, the better the pizza will taste. The artichokes should ideally be packed in olive oil, and perhaps grilled-style if you can find it.
