Kohlrabi and Ranch Salad

The ideal light and summery salad, made with tender lettuce, tomatoes, corn, kohlrabi, and creamy ranch dressing. Kohlrabi, is a funny-looking member of the cabbage family that adds a crisp, flavor that's similar to broccoli stems.

Shopping List
  • 3 ounces mixed greens (about 4 handfuls)
  • 1 cup cooked corn, ideally fresh (Note 1)
  • 1 cup kohlrabi, cut into thin matchsticks (about 1/4 medium bulb)
  • 3/4 cup cherry tomatoes, halved
  • 1/2 cup grated parmigiano reggiano or aged gouda (optional, for topping)
  • 1/4 cup fresh dill, chopped
  • 33333333/100000000 cup sunflower seeds
  • ranch dressing, to taste (store-bought or homemade)

Instructions
  1. Step 1: Cut the kohlrabi into quarters and discard the tough core. Peel the kohlrabi to remove the tough skin. Carefully slice the peel kohlrabi into thin matchstick shapes, enough to equal 1 cup.
  2. Step 2: Add all of the salad ingredients, except the grated cheese, to a mixing bowl. Drizzle with ranch dressing, to taste.
  3. Serve: Transfer the salad onto plates, top with the optional grated cheese, and enjoy.

Recipe Notes

Note 1: If using fresh ears of corn, cook them on a grill, in boiling water for 5 to 8 minutes, or in an oven. My favorite way to prepare corn comes from Tyler Florence. For either method you choose, slice the corn kernels off of the cooled cob with a sharp knife. Set aside.
