  • 1 medium head cauliflower (or 1 pound(s) fresh or frozen riced cauliflower)

Instructions
  1. Step 1: Preheat the oven to 400 degrees Fahrenheit.
  2. Step 2: Remove the external leaves and the bottom of the hard stalk on the cauliflower. Note: If using the pre-riced cauliflower, skip ahead to Step 4.
  3. Step 3: Food Processor Method: Cut the cauliflower into small, 2-inch chunks. Place 1 handful of cauliflower into a food processor fitted with an s-blade (overcrowding will result in a "rice" that isn't evenly-sized). Pulse until the cauliflower is the size of a grain of rice. Transfer to a baking sheet. Repeat this process with all remaining cauliflower.

    Grating Method: Cut the cauliflower into large chunks. Use the cheese-grating side of a box-grater to grate the cauliflower into "rice". Transfer to a baking sheet.
  4. Step 4: Spread the rice evenly over a lined baking sheet. If using frozen cauliflower rice, defrost it in the refrigerator or microwave so that you can break up any frozen clumps. Bake for 8 to 10 minutes, until the cauliflower on the edges of the pan begin to turn lightly golden. It should not be wet at all.
  5. Serve: Enjoy with stir fries and burrito bowls!
