Chocolate Banana Mug Cake (Paleo, Vegan)

An easy, delicious, healthy-ish vegan mug cake that tastes like fluffy chocolate banana bread. Only 1 minute to make and naturally grain-free. We like to top this with sliced banana and plenty of chocolate chips.

Shopping List
    For the Cake
  • 1/4 ripe banana, mashed (about 2 tablespoons mashed)
  • 2 tablespoons blanched almond flour
  • 1 tablespoon unsweetened cocoa powder
  • 1 tablespoon cane or coconut sugar
  • 1/2 tablespoon smooth almond or peanut butter
  • 1/16 teaspoon baking soda Toppings (optional)
  • chocolate chips and/or leftover sliced banana

Instructions
  1. Step 1: Stir together all of the cake ingredients until smooth and then transfer to 1 small (4 inch) microwaveable ramekin(s) or a microwaveable mug.
  2. Step 2: Microwave for 60 seconds, or until fluffy. Add any optional toppings over the cake. Let the cake cool for 60 seconds before eating.
  3. Serve: Grab a spoon and enjoy your cake directly from the ramekin or mug.
