A deliciously easy and creamy stovetop oatmeal porridge recipe made with fruit puree and chia. Top with your favorite toppings for the ultimate comforting meal that can be enjoyed warm or cold.

Shopping List
    Oatmeal
  • 3/4 cup non-dairy milk (such as light coconut milk)
  • 1/2 cup rolled oats (not quick-cooking or steel cut)
  • 1/2 ripe banana, mashed (or 1/4 cup of applesauce)
  • 1 tablespoon nut butter of choice (such as cashew or peanut butter)
  • 1/2 tablespoon chia seeds Toppings (Optional)
  • warmed berries, more nut butter, maple syrup, and/or sliced banana

Instructions
  1. Step 1: Add all of the oatmeal ingredients to a small saucepan over medium heat.
  2. Step 2: Cook, stirring regularly, for 5 to 10 minutes until thickened and soft. Add a little splash more milk if needed.
  3. Serve: Spoon the warm porridge into a bowl and top with your favorites. Enjoy warm. Note: As an alternative, you could also allow the oatmeal to chill and refrigerate it in an airtight container for an overnight oats option (add a splash more milk before eating).
