Dad's Favorite Beyond Burgers

It may seem counterintuitive to serve a plant-based burger with traditional bacon, it's an easy way to introduce avid meat eaters to vegan burger patties. The bacon and burger patties cook in the same pan, infusing the burgers with flavorful bacon grease. Top it off with caramelized onions and syrupy balsamic vinegar for a burger that's dangerously good.

Shopping List
  • 4 Beyond Burgers (or other vegan burger patties)
  • 4 burger buns of choice
  • 8 slices bacon
  • 1 brown or red onion, thinly sliced
  • 2 tablespoons balsamic vinegar (plus more for drizzling)
  • 1 tablespoon olive oil
  • cheese, to taste (such as blue cheese, goat cheese, parmesan, or provolone)
  • lettuce, to taste (optional)

Instructions
  1. Step 1: First, let's caramelize the onions. Heat the oil in a wide frying pan over medium-high heat. Add the onions, some optional salt, and stir. Cook for about 20 minutes, stirring occasionally. Add a few splashes of water to the pan as needed to prevent sticking. They will be ready when they have reduced and are very tender.
  2. Step 2: Add the balsamic vinegar and stir to combine. Allow the onions to cook for another 2 minutes, or until the excess liquid has cooked off. Set aside.
  3. Step 3: Heat a wide frying pan over medium-high heat. Add the bacon slices and burger patties (you may need to do this in batches to avoid overcrowding). The bacon grease will cook into the burgers and add lots of flavor. Cook the burgers for 2 to 3 minutes per side, or until the sides have lightly browned and get a lightly crisp crust. Flip the bacon slices once they become crisp.
  4. Step 4: Once the bacon is cooked, remove it from the pan and transfer to a paper towel.
  5. Step 5: Right before the burgers are done, add the cheese and cover with a lid for several seconds until warmed.
  6. Serve: Top the burger patties with a large dollop of caramelized onions and the crispy bacon. Drizzle with more balsamic vinegar. Enjoy in a bun with some lettuce, or as is.
