Curried Chicken Salad

This creamy chicken salad is loaded with plump raisins, curry spices, ginger, and a kick of jalapeño. Greek yogurt takes the place of most of the mayonnaise for a lighter alternative that doesn't compromise on flavor. If you’re in a hurry, a rotisserie chicken can be used instead of the poached chicken. Enjoy this chicken salad as is, in a pita pocket, or over a bed of fresh greens and chopped mangoes.

Shopping List
  • 3 poached chicken breasts (Note 1)
  • 2 celery stalks, diced
  • 1/2 cup plain Greek yogurt
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup raisins
  • 1/2 jalapeño, finely chopped (double if you like it spicy)
  • 2 tablespoons mayonnaise
  • 2 teaspoons fresh ginger, finely chopped
  • 1 teaspoon honey
  • 1 teaspoon dijon mustard
  • salt and pepper, to taste

Instructions
  1. Step 1: Stir together all ingredients, except for the chicken, in a bowl. Add the chicken to the spiced yogurt mix and stir to coat. Taste and adjust seasonings as desired. This chicken salad has the best flavor when it’s been left to marinate in the refrigerator a few hours.
  2. Serve: Serve the chicken salad as is, over greens alongside some juicy mango, or stuffed in a sandwich. Enjoy.

Note 1: 1 pound of chopped, pre-cooked plain rotisserie chicken can be used in place of the 3 poached chicken breasts.

Note 2: Use a thick, Greek-style non-dairy yogurt if possible (I use COYO brand). A regular non-dairy yogurt may be used as well, but should ideally be strained overnight to remove any excess liquid.
