Curried Chicken Salad

Curried Chicken Salad! An easy chicken salad recipe made with diced chicken, toasted almonds, raisins, curry powder, and mayonnaise (or Greek yogurt). A little bit of added fresh mango is also delicious in this.

Shopping List
  • 12 ounces poached chicken (or rotisserie chicken, Note 1)
  • 2 scallions, chopped
  • 2 tablespoons raisins (or currants or chopped dried apricot)
  • 1/4 cup slivered almonds
  • 1/4 cup mayonnaise (or plain Greek yogurt)
  • 1 tablespoon curry powder
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1/2 tablespoon honey
  • salt and pepper, to taste

Instructions
  1. Step 1: Toast the almonds in a dry pan over medium heat until golden and fragrant, about 2 minutes. Shake the pan often to avoid burning. Set aside.
  2. Step 2: Dice the cooled chicken into bite-sized pieces. Place it in a mixing bowl.
  3. Step 3: Add all of the remaining ingredients, including the toasted almonds, and stir everything together until creamy. Refrigerate until ready to use.
  4. Serve: Serve this curried chicken salad on its own, over greens, or stuffed in a sandwich. Enjoy.

Recipe Notes

Note 1: This should make about 1 heaping cups of cooked, diced chicken. Cooked chicken thighs are also delicious in this.
