Crouton Salad with Cashew Balsamic Dressing

This Crouton Salad with Cashew Balsamic Dressing is tossed with garlicky croutons, bell pepper, tomatoes, blue cheese, and a creamy-thick balsamic dressing. Filling, crunchy, and delicious!

Shopping List
    For the Salad
  • 3 ounces spring mix
  • 1 heaping cup garlic croutons (store-bought or homemade)
  • 1 cup red bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1 ounce crumbled blue cheese (or goat cheese) For the Dressing
  • 1/4 cup raw cashews (not roasted)
  • 3 4 tablespoons water
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon dijon mustard
  • 1/2 teaspoon all-purpose seasoning (optional, Note 1)
  • 1/2 teaspoon low-sodium tamari
  • 1/2 teaspoon nutritional yeast (optional)
  • salt and pepper, to taste

Instructions
  1. Step 1: Combine all of the dressing ingredients with an immersion blender or small standing blender until very smooth. Season with salt and pepper, adding more water for a thinner consistency. Note: This dressing will thicken when refrigerated.
  2. Step 2: Toss the spring mix with a little olive oil in a serving bowl. Top with the croutons, bell pepper, tomato, and cheese. Drizzle with dressing, to taste, and toss to combine.
  3. Serve: Enjoy! Any extra dressing will last up to 1 week refrigerated.

Recipe Notes

Note 1: To make your own all-purpose seasoning mix, combine 1/2 teaspoon paprika + 1/2 teaspoon onion powder + 1/2 teaspoon garlic powder + 1/4 teaspoon oregano + 1/4 teaspoon cayenne pepper (optional).
