Chocolate-Dipped Stuffed Dates

Sweet, juicy dates stuffed with a crunchy nut butter filling and then dipped into chocolate for a frozen treat that's delicious in every layered bite. Consider this a template recipe, where both the type of nut butter and the crunchy mix-in are up to you! Only 5 ingredients, no bake, and so easy.

Shopping List
  • 8 large medjool dates, pitted
  • 1/2 cup chocolate chips
  • 1/4 cup puffed rice cereal or lightly chopped nuts of choice (Note 1)
  • 3 tablespoons runny nut butter of choice (such as peanut, almond, or cashew)
  • 1 tablespoon coconut oil

Instructions
  1. Step 1: Cut a slit lengthwise into each date and remove the pit. Carefully open the date, like a book.
  2. Step 2: Stir together the nut butter and the puffed rice or nuts in a small bowl. Spoon a heaping teaspoon of the sticky mixture into each pitted date. Transfer the dates to the freezer for at least 1 hour, or until the filling has hardened.
  3. Step 3: Melt the chocolate chips and coconut oil together in a small microwaveable bowl or double boiler until pourable. If using a microwave, heat the chocolate in 20 to 30 second increments to avoid burning.
  4. Step 4: Dipping time! Remove the chilled dates from the freezer and dunk in the melted chocolate, coating all sides. I like to do this by placing the date on a fork, lowering it into the chocolate, and then spooning chocolate over the top. Transfer the coated dates onto a wire cooling rack with parchment paper place beneath to catch any drips. Transfer the dates back to the freezer until fully hardened.
  5. Serve: Carefully remove the dates from the cooling rack (use a small knife if the chocolate is stuck) and transfer to an airtight container. Store in the freezer until ready to eat.

Recipe Notes

Note 1: Some of my favorite nut mix-ins here are pecan halves, roasted almonds, or salted cashews. Choose your own personal favorite.
