Silky smooth decadent chocolate pudding that melts in your mouth. Ready in under 10 minutes. No one ever believes there's avocado in this, it's just so good!

Shopping List
  • 1 ripe avocado
  • 1/4 cup unsweetened cacao or cocoa powder
  • 2 tablespoons date syrup (Note 1)
  • 1 tablespoon maple syrup
  • 1 tablespoon smooth nut-butter (Note 2)
  • 1 tablespoon coconut oil, melted
  • 1 tablespoon water Topping (Optional)
  • 1/4 cup fresh raspberries

Instructions
  1. Step 1: Blend all ingredients, except the optional raspberries, in a food processor until very smooth with no avocado pieces remaining. Scrape down the sides with a spatula as needed.
  2. Serve: That's it - refrigerate and enjoy! Top with the optional berries before serving.

Recipe Notes

Note 1: Date syrup adds extra depth here. We use this one. In a pinch, you can substitute with an equal amount of maple syrup.

Note 2: Any smooth nut or seed butter will work here: almond, sunflower, cashew, hazelnut, pecan, etc. We especially love using the mixed nut butter from Trader Joe's.
