Chocolate Avocado Pudding

Valentina

Silky smooth chocolate pudding that melts in your mouth. This 10-minute recipe is a far cry from the traditional sugar-laden and cream-based varieties. Instead, ripe avocado creates a rich base while raw cacao adds decadence. A ripe, unblemished avocado and a food processor are key to this recipe's success - though a blender might work, with varied results. And the taste? Plush. Definitely delicious enough to serve to loved ones, or enjoy on your own while curled up on the couch.

Shopping List
  • 1 ripe avocado
  • 1/4 cup unsweetened cacao or cocoa powder
  • 2 tablespoons date syrup (Note 1)
  • 1 tablespoon maple syrup
  • 1 tablespoon smooth nut-butter (Note 2)
  • 1 tablespoon coconut oil, melted
  • 1 tablespoon water Topping (Optional)
  • 1/4 cup fresh raspberries

Instructions
  1. Step 1: Blend all ingredients, except the optional raspberries, in a food processor until very smooth. Scrape down the sides with a spatula as needed.
  2. Serve: That's it - refrigerate and enjoy! Top with the optional berries before serving.

Recipe Notes

Note 1: Date syrup adds extra depth here. It's sold in many grocery stores, but if you don't have any on hand, you can substitute with an equal amount of maple syrup.

Note 2: Any smooth nut or seed butter will work here: almond, sunflower, cashew, hazelnut, pecan, etc. I especially love using mixed nut butters.
