Shopping List
    For the Pudding
  • 1 (15 ounce) can unsweetened pumpkin puree
  • 3/4 cup walnuts
  • 1/2 cup pecans
  • 8 medjool dates, pitted
  • 2 teaspoons pumpkin pie spice
  • 1/8 teaspoon ground cloves (optional) For the Crumble
  • 1 cup pecans and/or walnuts
  • 2 medjool dates, pitted

Instructions
  1. Step 1: Pulse the crumble ingredients in a food processor until it forms coarse crumbs, like tiny pebbles. Transfer to a bowl.
  2. Step 2: Combine all of the pudding ingredients in the emptied food processor. Blend until very smooth, about 1 to 2 minutes. Scrape down the sides as needed.
  3. Step 3: Scoop one layer of the pumpkin blend into your container of choice, about 1 inch high. Sprinkle a thin layer of the crumbs on top. Repeat this process, layering as you go, until all the filling and crumbs are used up.
  4. Serve: Grab a spoon and enjoy chilled or at room temperature with optional whipped cream on top. Keep in mind this is quite rich, so a little goes a long way.
