Shopping List
  • 1 fresh or frozen pie crust of choice
  • 2 (15 ounce) cans poached pears (Note 2)
  • 33333333/100000000 cup cane sugar
  • 5 1/2 tablespoons non-dairy butter
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 66666667/100000000 cup non-dairy chocolate chips
  • 1 tablespoon + 2 teaspoons non-dairy milk

Instructions
  1. Step 1: Defrost or prepare your pie crust in a pie dish or springform pan. There is no need to pre-bake the crust.
  2. Step 2: Preheat oven to 410 degrees Fahrenheit.
  3. Step 3: Melt the sugar, butter, and vanilla together in a small saucepan, stirring the foamy mixture continuously until the sugar has completely dissolved. Set aside to cool.
  4. Step 4: Next, melt the chocolate chips in a double boiler or microwave. If using a microwave, heat in 20 second increments, stirring after every time, to avoid burning. Combine the melted chocolate with the milk and stir well until smooth. Pour the melted chocolate mixture over the unbaked crust and spread it evenly across the bottom of the pie with a spatula or spoon.
  5. Step 5: Drain and slice the pears. Arrange the slices evenly over the chocolate layer. Depending on the depth of your pie crust, you can either use 1.5 cans of poached pears (for a standard pie crust), or up to 2 full cans if your pie crust is quite deep. Note: Any leftover pear slices make a great oatmeal topping.
  6. Step 6: Once the sugar and butter mixture has cooled, whisk in the egg until smooth. Pour this evenly over the pear slices, being careful not to overfill.
  7. Step 7: Bake for 15 minutes at 410 degrees Fahrenheit. After 15 minutes, raise the temperature to 420 degrees Fahrenheit and cover the crust with rolled foil or a pie guard. Bake another 40, or until cooked through and golden brown.
  8. Serve: Place on a wire rack and cool to room temperature before slicing. This pie is especially delicious served slightly warmed.

Recipe Notes

Note 1: Recipe inspired by Journal Des Femmes.

Note 2: If you'd prefer to poach your own pears, every 1 (15 ounce) can of poached pears should contain about 3 very small pears (or 2 medium-sized ones).
