Chimichurri Sauce

Argentina and Uruguay are famous for their parsley-based chimichurri sauce. The uncooked sauce is a staple alongside grilled meat. This version is made mainly of chopped parsley, garlic, dried oregano, and a splash of red wine vinegar. While I can't say this chimichurri sauce is strictly traditional - I can say that it is delicious.

Shopping List
  • 1 large bunch parsley, finely chopped
  • 1/2 cup extra-virgin olive oil
  • 2 tablespoons shallot or red onion, finely chopped
  • 1 1/2 tablespoons red wine vinegar
  • 2 teaspoons dried oregano
  • 2 garlic cloves, minced
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon sea salt
  • black pepper or red pepper flakes, to taste

Instructions
  1. Step 1: Add all ingredients to a small bowl and stir until into a thick, but pourable sauce. Refrigerate until ready to use. Note: Depending on the size of your parsley bunch, you may need to scale up the other ingredients to compensate.
  2. Serve: This sauce is amazing on Steak with Chimichurri Sauce, Blackened Carrots, fresh tomatoes, and roasted vegetables.
