Celery Citrus Salsa

Crisp celery makes a surprisingly great accompaniment to juicy oranges and ripe avocado. Seasoned simply with lime juice, agave, and a little salt - it makes for a wonderful salsa, salad topper, or taco topping.

Shopping List
  • 1 cup celery stalks, with leaves (about 2small stalks)
  • 1/2 navel orange
  • 1/2 avocado
  • 2 chopped scallions or 3 tablespoons chopped red onion
  • 2 tablespoons chopped cilantro (optional)
  • 1 tablespoon lime juice
  • 1 jalapeño (or 1/8 teaspoon chili flakes
  • 1/2 teaspoon agave nectar
  • 1/4 teaspoon salt

Instructions
  1. Step 1: To segment the orange, first slice off the top and bottom of the orange with a sharp knife. Prop the orange up on the flat bottom and slice away the rest of the peel, including the white pith. Next, cut between the membranes to remove the orange wedges. Chop the orange wedges into bite-sized pieces.
  2. Step 2: Finely chop the celery and dice the avocado. Combine these with the chopped orange, scallions, cilantro, and jalapeño.
  3. Serve: Add the lime juice, agave nectar, and salt. Toss to combine and serve immediately.
