Burger and Hummus Salad

This easy meal-in-one salad is perfect for a busy weeknight meal. Made with roasted sweet potatoes, salad greens, and avocado in a simple olive oil and lemon dressing. Top it off with a warm burger patty of choice and a dollop of creamy hummus for a delicious, filling meal.

    Salad
  • 2 burger patties of choice (such as chicken, fish, or veggie burgers)
  • 3 ounces mixed greens
  • 1 large sweet potato
  • 1 bell pepper, thinly sliced (optional)
  • 1/2 avocado, sliced
  • 1/4 cup hummus (such as simple chickpea or cauliflower hummus)
  • 4 tablespoons extra-virgin olive oil
  • 1 1/2 tablespoons lemon juice
  • salt and pepper, to taste

Instructions
  1. Step 1: Stir together 3 tablespoons of the olive oil, all the lemon juice, and some salt and and pepper in a small bowl. Set aside.
  2. Step 2: Preheat the oven to 410°F. Slice the sweet potato into thin 1/4 to 1/2 inch slices and toss in the remaining 1 tablespoon of olive oil with some salt and pepper. Spread the potato slices on a baking sheet. Flip the potatoes over after the first 10 minutes and continue cooking until the potatoes are fork-tender, about 5 to 10 more minutes depending on the thickness.
  3. Step 3: Meanwhile, cook the burger patties on the stovetop or in the oven as needed.
  4. Serve: Toss the salad greens in a small splash of the dressing and divide the salad greens onto bowls. Top with the warm potatoes, avocado, optional bell pepper slices, warm burger patty, and hummus. Add additional dressing as desired. Enjoy.
