An easy and delicious vegan mug cake that tastes like banana bread but takes only 1 minute to make. Just mix, microwave, and enjoy. We like to top this with the sliced banana and chocolate chips.

  • 1/4 ripe banana, mashed (about 2 tablespoons mashed)
  • 2 tablespoons blanched almond flour
  • 1 tablespoon all-purpose flour or gluten-free blend
  • 1 tablespoon cane or coconut sugar
  • 1 tablespoon smooth peanut or almond butter
  • 1/4 teaspoon baking powder
  • pinch of cinnamon (optional) Toppings (optional)
  • chocolate chips and/or leftover sliced banana

Instructions
  1. Step 1: Stir together all of the cake ingredients until smooth and then transfer to 1 small (4 inch) microwaveable ramekin(s) or a microwaveable mug.
  2. Step 2: Microwave for 60 seconds, or until fluffy. Add any optional toppings over the cake. Let the cake cool for 60 seconds before eating.
  3. Serve: Grab a spoon and enjoy your cake directly from the ramekin or mug.
