  • 1 large, ripe avocado
  • 2 persian or cocktail cucumbers
  • 1/2 cup cherry tomatoes, halved
  • 2 tablespoons radicchio, thinly sliced
  • 2 tablespoons red onion, thinly sliced
  • 2 packed tablespoons whole parsley leaves
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon red wine vinegar
  • 1/4 teaspoon ground sumac (Note 1)
  • 1/8 teaspoon salt

Instructions
  1. Step 1: Halve the cucumbers and dice into small pieces. Next, dice the avocado into large 1 inch pieces.
  2. Step 2: Gently fold all of the ingredients together in a mixing bowl, being careful not to smash the avocado pieces. Taste and adjust seasonings as needed.

Note 1: Sumac is a tart and lemony red-hued spice that is a most commonly used in Middle Eastern cooking. If you cannot find sumac, try substituting with some fresh lemon zest.
